Carving pumpkins to make Halloween lanterns? If you want to make something different from usual pumpkin pie, pumpkin cookies or pumpkin soup with what you scoop out from inside the pumpkins, try this delicious honey pumpkin bread this Halloween. Your family and friends will love it.
First, preheat oven to 325F. Cover 2 cups pumpkin with a wet paper towel in a bowl and microwave for 5 minutes. Mash the cooked pumpkin with a spoon and let it cool. Beat 3 eggs and 1 cup honey in a separate bowl. Add the pumpkin and ¼ cup pumpkin seed oil to it. In another bowl, mix ¼ cup butter milk, ½ cup plain yogurt with 2 teaspoons baking soda. In a large bowl, mix 4 cups flour, ½ teaspoon salt, 1 teaspoon freshly ground nutmeg, 1 teaspoon cinnamon, and add the pumpkin and yogurt mixture to it. Blend all ingredients together and pour into two greased medium size loaf pans. Finally, bake for about an hour and serve this hot, slightly sweet, yummy bread at brunch!
